I imagine millions of people have leftover corned beef from last night’s St. Patrick’s day dinner. I’m sure many of them are having corned beef hash this morning.

Dinner leftovers for breakfast? We had large NY strip steaks for dinner the other night and they were a bit larger then the portion sizes we aim for. Luckily there was enough leftover for us to have them for breakfast this morning, along with homemade home fries and scrambled eggs.

We love Denver omelets, (well at least I do), so we have them quite often. Diced ham, onion and bell pepper with shredded cheese all wrapped in egg. This one was served with home fries.
